Plastic sounds like a very uncomfortable material to bind with but I wouldn’t know, I guess.

That calendar says 100% plastic free. Does that just mean it uses the paper bags instead of disposable plastic ones, or that it's only the paper calendar and you need to supply your own bricks for the build inspirations?

It is just a suggestions calendar, you have to use your own bricks.
